I will be posting my molding and scanning experience on a very popular dodge forum so you will get lots of free advertising! Very few threads out there show an end to end process of molding and scanning cylinder head ports, its an emerging thing!
Heres an example:

I have a 3D scanner, a kinect with Skanect software, paid license. I would like the opportunity to scan your object. We charge $25 an hour and can do full color scans.
A Kinect with Skanect might be about enough, so long as it's been fitted with lenses to reduce its focal length but I think you're right. Something like a David SLS would do a good enough job for you or even the David laser scan starter kit. What do people do once they have the port digitised?
I've been mulling over acquiring a David SLS for a while and would be willing to consider investing in a rig if there's sufficient demand.
Cheers!

Once I have a model of the port, I can make a toolpath for it in Camworks and machine the port to reshape it for better flow.
